01. ABOUT RECIPES

Urad Dal Adai is a traditional South Indian savoury pancake made from dehusked urad dal combined with rice and flavoured with onions, green chili, ginger, curry leaves, and cumin seeds. Lightly cooked on a tawa with minimal oil, it is soft, slightly crisp, and highly nutritious. 02.INGREDIENTS

  • Urad dal (split black gram, dehusked) – 15 g
  • Rice (raw, parboiled or raw rice) – 10 g
  • Onion – 2 g (finely chopped)
  • Green chilli – 0.5 g (optional, chopped)
  • Ginger – 0.5 g (grated)



  • Curry leaves – 0.2 g (finely chopped)
  • Cumin seeds – 0.2 g
  • Salt – to taste
  • Water – as needed for batter
  • Oil – 1 g (for shallow frying)

04. INSTRUCTIONS:

  • Wash and soak urad dal and rice separately for 3–4 hours.
  • Grind both together with minimal water to form a thick, smooth batter.
  • Add chopped onion, green chilli, ginger, curry leaves, cumin seeds, and salt to the batter.
  • Heat a skillet or dosa tawa; lightly grease with oil.
  • Pour a small ladle of batter and spread into a small thick circle.
  • Drizzle a few drops of oil around the edges and cook until golden on both sides.
