01. ABOUT RECIPES

Varagu Upma is a traditional South Indian breakfast made with Kodo millet (Varagu), a highly nutritious and gluten-free grain. It is lightly sautéed with onions, green chillies, and ginger, curry leaves, and tempered with mustard seeds and urad dal for flavour. Chopped vegetables like carrots and beans are added to enhance its taste, texture, and nutritional value. Varagu Upma is easy to digest, filling, and ideal for a healthy start to the day.

02.INGREDIENTS

  • Kodo millet (Varagu) – 30 g (uncooked)
  • Onion – 10 g (finely chopped)
  • Green chilli – 2 g (slit)
  • Carrot – 10 g (finely chopped)
  • Beans – 10 g (finely chopped)
  • Ginger – 2 g (grated)



  • Curry leaves – 1 g
  • Mustard seeds – 1 g
  • Urad dal – 2 g
  • Oil – 3 g
  • Water – ~90 ml
  • Salt – to taste

04. INSTRUCTIONS:

  • Rinse and drain the kodo millet well.
  • Heat oil in a pan, add mustard seeds, urad dal, and allow them to splutter.
  • Add curry leaves, green chilli, and ginger, sauté briefly.
  • Add onions, sauté till translucent, then add carrots and beans, cooking for 2–3 minutes.
  • Add water and salt, bring to a boil.
  • Add washed millet, stir well, cover, and cook on low flame until water is absorbed and millet is soft.
  • Fluff up with a fork and serve hot.
